Some honest thoughts featuring the perfect breakfast

Hello you, yes you who still read my blog or you who just happen to stop by.  I haven’t been active for a month now and I know it’s bad but I think I really needed this little break. I was busy with work, I travelled a little around Europe, I studied for upcoming school applications and I went to few concerts. I first thought that I had lost my interest for this blog in general because no matter how busy I was I always managed to make time to write. It took me few weeks to realise what really was holding me back and I am so glad that it hit me.

I was so busy that I didn’t have time to be active and read other bloggers posts which made me think that ‘if I am not active no one will return the favour’. It drove me to a circle where I kept telling myself that I can’t post anything before I have read all the blog posts from others and been ‘active’ in wordpress. Blogging had became more of a thing that I had to do than just a hobby that I loved. It was all just because of the stress over stats.

I took some time to clear my head which is why I was gone for so long. I kept taking pictures and coming up with new idea for blog posts but I just couldn’t write. Now that I have reminded myself that I am not doing this to get comments, likes or activity in general I think I am ready to come back. I am doing this for myself and because I love it. I love fashion and trends, food, beauty and travelling and this is my perfect escape from reality. It’s great if someone actually enjoys reading my outcome but most importantly I want to be happy with it. And that’s what I will keep in mind now.

Now to make sure this blog post isn’t just full of ramblings, lets take a moment to admire my delicious breakfast. Me and my friend wanted to go have a good but aesthetic breakfast together. And Helsinki is full of pretty places where you can get good food so we decided to go to one of our favourite spots, Paulig Kulma. Definitely recommend that place, it’s full of vegan and gluten free snacks, and they make such a good coffees. My favourite is their raw hot chocolate. Their breakfast included a croissant with some jam, one drink from their list and two dishes from the breakfast menu. I chose mango overnight oats and matcha pancakes with some strawberries and syrup. It was delicious!

After the upcoming summer my blog will turn two and it’s safe to say that I am not going anywhere, this is only the beginning. And besides everyone has these moments when they doubt everything. Thank you for reading and understanding, see you in my next blog post (which goes up tomorrow)!

Three ingredient oatmeal banana cookies

I am one of those people who really want to live and eat healthy but I can’t go long without the need of something sweet. For those weak moments I have collected quite a few healthy recipes to take away the cravings. These banana oatmeal cookies are the ones I have found myself reaching towards for a lot lately so I thought why not share them with you lovely bunch!

I know these include dark chocolate so probably not everyone consider these as healthy snacks but I always use a chocolate that contains at least 80% cacao. It’s better than milk chocolate at least hehe. Well enough rambling, let’s get into the easiest recipe you have ever seen!

Ingredients

  • Two ripe bananas
  • 100g dark chocolate
  • 2½ dl gluten free oats (all-purpose and whole wheat oats work too)

Method

Using fork, smash the bananas in a large bowl. The batter doesn’t have to be smooth, there can be blobs of bananas. Then roughly chop the dark chocolate using a knife. Add dark chocolate and oats to the smashed banana batter and mix them together.

Make about twelve round balls out of the cookie batter and place them on a baking sheet. Gently press down each ball so it flattens into a round disc. The cookies won’t spread during baking so there does not have to be much space between them.

Bake the cookies in 200 degrees for 10-15 minutes and enjoy!

Halloween is knocking on the door and even though we don’t really celebrate it here in Finland I felt like a halloween themed post is a must have. So what would be nicer than share a little recipe of easy halloween cupcakes. Okay yes that was a lie. They are not easy, of well the muffins were piece of cake but the frosting. Just wow my back still hurts. But what wouldn’t I do for you lovely bunch.

And by the way before we start, these are also gluten free yay!

Ingredients

Carrot and cocoa cupcakes: (makes about 14 small or seven big cupcakes)

  • 2 carrots
  • 3½ dl gluten free flours (all-purpose-flour works just fine too)
  • ½ dl unsweetened cocoa powder
  • 1 tsp vanilja sugar
  • 1¼ tsp baking powder
  • 3 eggs
  • 1 can (150g) of crème fraiche
  • 1½ dl rapeseed oil

dl = Desilitre tsp = teaspoon

Orange flavored frosting:

  • 75g unsalted butter, softened to room temperature
  • 500g icing sugar
  • 1 can (200g) of orange flavored cream cheese
  • Black, yellow and red food coloring

Method:

1. Grate the carrots. In a small bowl combine flours, cocoa powder, baking powder and vanilla sugar and gently mix using a spoon. In other bowl whisk (gently) the eggs and sugar, just breaking the structure of the eggs. Then add the crème fraiche and rapeseed oil.

2. Mix grated carrots to the egg mixture. Then add the flours etc. using a big spoon to stir and combine the dough. When the batter is smooth divide it to the cupcake liners. Bake in 200 degrees for about 20 minutes.

3. For the icing whisk (again gently) the softened butter until smooth. Add icing sugar whisking all the time with the lowest power of your electric mixer. When all the icing sugar is added, turn the power up a little and whisk until smooth. At this point the mixture should look like flours.  Then add the cold cream cheese and whisk until the batter is smooth but thick.

4. Separate the frosting into a two bowls. For orange color, mix the red and yellow food coloring together. Be really careful to not add too much red. When you have orange color mix it with one of your two frostings. Mix black food coloring with the other frosting.

5. Put your desired tip to a piping bag (I recommend one with star tip). And now this is where it gets hard. So I would say all’s fair. First spoon the orange frosting into the piping bag. I laid the bag to the table and filled half of it with the frosting so it was ‘easier’ to add the black frosting on top of it. Make sure the tip is filled with half of the each frostings too. When you are done with both of the frostings one side of the piping bag should be filled with orange frosting and the other side with black. If you completed, congratulations. If this all sounds too hard you can just simply pipe the cupcakes with orange and black frostings separately.

Good luck with decorating, hope you don’t hurt your bag like I did hehe.

Delicious & healthy banana pancakes

Since the whole world (including me) seems to have fallen in love with eating healthy I thought there is no better time to share a recipe for these delicious, easy and healthy banana pancakes. And with easy I mean oh so easy since you need only two ingredients (maybe three if you want to spice them up a little). These pancakes are perfect for anyone who wants to stick to healthy lifestyle but still craves for something sweet and delicious (as known as me all the time). You can have them basically whenever you like because they are perfect snack but I personally prefer them for breakfast!

Banana pancakes  (makes about 12)

Ingredients:

  • 1 banana (the browner the better)
  • 2 eggs
  • Pinch of cardamom, cinnamon, vanilla or honey (I recommend cardamom, it’s my favorite of them all)

Method:

Add all the ingredients into a blender and blend until the dough is smooth. Cook them in a mild heat, for example, with rapseed oil. The smaller the pancakes are the easier they are to work with and flip around. I will admit that flipping them is little tricky, but I am sure you will do well. Serve them with some berries, yoghurt or with my personal favorite; a maple syrup.

Note: If you want to be extra healthy you can use only egg whites but you need about four of them. You can also add some protein powder or coconut flakes before blending, adding flour may help the pancakes to stick together better.

Smoothie bowls are huge thing on every social media nowadays just because they are so pretty and pleasing for the eye. If you know me at all or follow me on social media you are aware of the fact that I am sucker for everything aesthetic. So of course I had to ditch smoothies in glasses for something this beautiful. Even though I have tried quite a few recipes there is so much more to discover because well you can create pretty much any combo of flavors that your heart desires.

So far I have fell in love with chocolate smoothie bowls, what a shocker, I know. But come on fresh, cold, healthy treat with pinch of chocolate who wouldn’t love that? And now you think I will share a recipe for that but no this post is all about tropical and refreshing smoothie bowls. I think these two recipes that I am about to share are perfect for warm summer mornings. Mango pineapple smoothie bowl for those who look for tropical vibes and strawberry banana smoothie bowl for those who want something little bit more sweet.

Mango pineapple smoothie bowl (serves one)

Ingredients:

  • 1 frozen banana
  • 2dl frozen pineapples
  • 2dl frozen mangoes
  • ½ dl coconut milk (or milk of choice)
  • On top: coconut, chia seeds, passion fruit and mango

Instructions:

Add all ingredients to a blender (not toppings of course) and blend until combined. Pour into a bowl and add the toppings that your heart desires.

Strawberry banana smoothie bowl (serves one)

Ingredients:

  • 1 frozen banana
  • 2dl frozen strawberries
  • ½ dl coconut milk (or milk of choice)
  • On top: coconut, chia seeds, banana and strawberry slices, dragon fruit

Instructions:

Just like in a smoothie above, add all the ingredients expect toppings to the blender. Blend until smooth. Pour into a bowl and sprinkle with toppings.

Tip: If you want your smoothie to be little bit more sweet add one teaspoon of honey along the ingredients that go to the blender. 

As you can see the recipes are really simple and easy to make, it only takes you five minutes. Hope you give these a try and love them as much as I do!

Hello lovely people. I am still alive even though there have been a lack of posts lately. I just struggle with my camera so much, I can’t get good quality pictures and it bothers me. I often borrow my friends’ camera but I can’t do that all the time of course. So please try to stick with me until I get new good camera!

Yesterday morning I managed to get some decent pictures of my lovely breakfast. It was one of those perfect mornings when sun is shining and you just feel so fresh and happy. I started my morning by going for a run. It was great decision because the weather was so nice. I didn’t have any other plans for rest of the day than relax and that’s exactly what I did. I had my breakfast in fridge all ready so I just had to make (christmas) tea and grab something to read (which ended up being old ELLE, oops) and then I was all settled to cuddle in bed.

My so called lovely breakfast was overnight oats, and I can tell you that I am not big fan of porridges. I didn’t have high hopes for this breakfast, obviously, but it did surprise me. I don’t think you can even compare overnight oat with porridge because they taste so different. Overnight oats’ texture is more like pudding than porridge and it’s much creamier, and basically it’s just tastier. Also it’s very quick and easy to make. This sounds like some sale speech but seriously I am blown away and dying to share the method with you. So here is five simple steps you need to follow to make delicious overnight oats:

  1. You need 1dl/ one cup of rolled oats.
  2. 1dl/ one cup of your choice of milk or water
  3. 1dl/ one cup of your choice of ‘paste’. For example greek yoghurt, berries, banana or unsweetened coconut.
  4. And for last but not least, to bring some flavor you need one table spoon of cocoa, honey, vanilla sugar, crumbled peanuts, cinnamon or whatever you like.
  5. Then just mix everything properly together and let it rest in fridge for overnight.

My overnight oat consisted rolled oats, milk, chopped banana, cinnamon and pinch of vanilla sugar. On the top I had persimmon. Definitely a worth of trying, believe me.

This is really a simple method to make overnight oats. If you want to take it to another level and make something with more ingredients you can find lots of delicious recipes online, as always nowadays haha.

My 2016 in squares

My 2016 in squares

The year has changed. Do you feel different now? New year new me right? Everyone says now it’s time to leave 2016 behind and I thought I would do exactly that. For me 2016 wasn’t the greatest, which is why I thought I wouldn’t do a blog post about it. This morning when I went for a run I ended up thinking about last year and I realized that it wasn’t that bad after all. It came with it’s downs, disappointments, mistakes, and people who let me down, some things I had to learn the hard way. But also I made beautiful memories with my friends and experienced things that I will never forget.

So after all this thinking I decided to do little recap of my year anyway, hope it’s not too late for that.

January 

I started the year off by traveling to Germany with my family and also kicked off my last months of school before graduating. Yay. And yes we took care of baby dolls at school.

February 

I went to Sweden to spend the last money I had after Germany. After that all I did was basically snowboard and enjoy the snow. Gotta take it all in before it melts away right?

March

I was sick half of this month (gladly I had these cute doggies comforting me) and other half I used to take pictures for my instagram.. feed is everything to me, you may have realized that if you follow me there, heh.

April

School coma and naps that saved me. Late night drives with friends while chasing the sunset (we did it way too much believe me, my camera roll is full of pictures of sunsets).

May

This month I started off by celebrating my friend’s birthday with good food and great company. I also travelled to Sweden again, maybe did little shopping there maybe not. I discovered beautiful Finnish nature and went to a concert that will stay in my heart forever. Thank you JVG.

June 

I loved every part of this month. June was so good to me. First I saw 5 Seconds Of Summer live (which was definitely one of the highlights of this whole year). I finally graduated as practical nurse yay go me! Then I found myself from Sweden again, seeing Little Mix live. And at the end of the month I had chance to celebrate midsummer at Finnish festival called Tahkon Juhannus.

July

More festivals and little trip to Estonia with great company. I had my friend coming over from Holland which was perfect end for the summer.

August 

I finally had the guts to start writing my blog properly so this month was filled with photo shoots. Some with friends, some with all by myself taking pictures of food haha. I also did little pokémon haunting, just like everyone back then probably.

September 

Walks with doggies while enjoying the autumn weather, hockey and Justin Bieber. So blessed.

October 

London is the place to be. I loved every part of our trip there even though my feet is still hurting from all the walking. I hope I have the chance to go there soon again. I also celebrated my 20th birthday on october, I’m so old I know.

November 

Basically all I did this month was got ready for christmas. I did christmas shopping very early this year and I am really proud of myself for that, left nothing for last minute. Also I drank way too much tea in these last two months, it’s coming out of my ears now.

December 

Oh December, the last 31 days of the year. I for sure enjoyed every part of this month. We went to a christmas market, baked gingerbreads and listened to christmas songs way too much. I got to end the year at a concert that was filled with amazing Finnish artists, I could not feel more grateful.

Now it’s the new year, new chances, same dreams but a fresh start.
